The last recipe post, “overnight slow-cooker porridge” we offered a method to prepare whole grain porridge that eliminates cook time in the morning. But what if you don’t have a slow cooker, or you don’t want to be constrained by the slow cooker cook time? How about porridge prepared overnight on the stovetop?
It’s just as simple to prepare as overnight slow-cooker porridge, with just a bit more to do in the morning before serving.
This porridge can be prepared with any whole grain; we often use short or medium grain brown rice, sometimes with a blend of millet, barley, or (steel cut) oats.

Overnight Whole Grain Porridge on the Stovetop
Ingredients
- 1 cup brown rice short/medium grain
- 3 cups water
- 1 cup unsweetened rice milk or other milk or water
- 2 tsp cinnamon
toppings
- 1 cup sliced fruit fresh or frozen
- 3 tbsp hemp hearts
- 3 tbsp almond butter
- 3 tbsp dark chocolate chips
Instructions
- Boil 1 cup of water per 1/3 cup of grain; add rice, reduce heat and simmer 10-15 minutes. Remove from heat and leave covered overnight (4+ hours, on the stove/counter or in the fridge).

- In the morning, add milk/water and cinnamon, bring to boil and then reduce heat and simmer for an additional 5-15 minutes, until the desired consistency is reached.

- Serve topped with sliced fresh or frozen fruit, nuts/seeds, and/or nut/seed butter.
