delicious whole grain breakfast porridge made in less time with pre-cooked whole grain.
In my previous post, “porridge with potential,” I presented a whole grain porridge recipe that takes approximately an hour to prepare… and even though much of that is passive cooking time, an hour is perhaps more time to prepare breakfast in the morning than some have available. Does this mean that enjoying such a delicious, nourishing, wholesome breakfast isn’t possible for those with morning time constraints? Nonsense! There are many ways to accommodate our modern lifestyles when preparing wholesome meals with whole foods.
One way we like to address this is with pre-cooked grains. We cook extra brown rice (usually when preparing dinner) for use in breakfast porridge, burritos, stir-fry, and more… it’s a great way to help make it easier to eat more wholesome meals more regularly by reducing the preparation time; planning meals ahead of time is another!

Chunky Monkey Whole Grain Porridge
Ingredients
- 4 cups cooked brown rice short or medium grain
- 2 cups oat milk or other plant milk or water
- pinch sea salt
- 1 tsp cinnamon optional
toppings
- 4 tbsp chocolate chips
- 4 tbsp almond butter
- 1/2 cup walnut pieces toasted
- 1 banana sliced
Instructions
- Add cooked rice, oat milk (or other plant milk, or water), sea salt, and cinnamon (optional) to a medium pot, and simmer for 5-15 minutes over medium to medium-low heat, until the desired consistency is reached.

- Toast walnut pieces in a cast iron pan over medium to medium-low heat, stirring regularly until golden brown.

- Serve topped with chocolate chips, almond butter, toasted walnut pieces, and sliced banana, or other toppings of your choice.
